CACTUS PEAR POPSICLES

Duration: Prep Time:  20 mins.  |  Freezing Time: 4 hours.


Experience ultimate refreshment with these delightful cactus pear popsicles, perfect for beating the scorching heat!

Ingredients:

•  8 fresh Catania cactus pears

•  1/2 cup freshly squeezed Catania limes

•  1/2 cup water

•  1/3 cup honey (or light agave nectar)

•  3/4 teaspoon salt

Directions:

1. Using a paring knife, carefully cut off the top and bottom of the cactus pears. Don’t forget to wear gloves to avoid the thorns getting stuck to your skin. Score the fruit lengthwise and peel the skin off of the fruit. Discard the peel and thorns, then dice the fruit.


2. In a blender, combine the cactus pears, lime juice, water, honey (or agave nectar), and salt; puree until smooth. Pour through a fine wire mesh strainer; discarding any solids or seeds.


3. Pour liquid into ice-pop molds and freeze for at least 4 hours.
