These mini fig pizza appetizers will surely be a hit in every occasion! Using figs as the main star of this recipe, you will keep coming back for more!
• Pizza dough
• Olive oil
• 1/4 onion, sliced in long strips
• 1/3 to 1/2 cup goat cheese, crumbled
• 70g brie cheese, sliced into thin strips
• Fresh Catania figs, sliced
• 1/4 cup pear, diced
• A handful of arugula
• A handful of walnuts
• Drizzle of honey
1. Start by caramelizing the onions on a pan with 1 tsp. of olive oil over low to medium heat. Stir occasionally, and cook until the onions are golden brown color (about 30 minutes to 1 hour).
2. When the onions are about halfway done, preheat oven to 450°F and place pizza stone on rack in center of oven.
3. Make small 1-oz balls out of pizza dough. Cover with kitchen towel until dough is room temperature and oven is hot.
4. Press out each small ball of dough or use rolling pin to form small pizza crusts. Place small handful cornmeal on rimless cookie sheet and place dough on cornmeal. Shake pan to make sure dough is not sticking to pan. Repeat with more crusts. Make as many that will fit on your pizza stone.
5. Spread 1/8 tsp. of olive oil evenly over the pizza dough balls.
6. Spread out the slices of brie cheese evenly. Sprinkle the goat cheese crumbles over the pizza, trying to fill in the gaps between the brie cheese slices.
7. Place fig slices and sprinkle the diced pear over the pizza.
8. Take pizza bites to hot oven and carefully slide them onto hot stone. Bake 7 minutes. When done, slide pizzas back onto cookie sheet using tongs or a metal spatula.
9. Remove the pizza from the oven. Spread a handful of arugula over the pizza. Top with a handful of small walnuts.
10. Add a small honey drizzle over the pizza. Best served fresh with your favorite wine.
