Sunset Fig Margarita

Ingredients:

For the fig syrup:

  • 12 fresh Catania figs
  • 1 cup water
  • 1/2 cup sugar

For the margarita:

  • 1/4 cup fig syrup
  • 1/3 cup freshly squeezed Catania orange
  • 2 tbsp honey
  • 2 oz. tequila
  • 1 oz. triple sec
  • Club soda

Directions:

For the Fig Syrup:

  1. In a saucepan, combine figs, water, and sugar. Bring to a boil over medium heat.
  2. Reduce the heat and let it simmer for 15-20 minutes, allowing the figs to break down.
  3. Strain the syrup through a fine mesh sieve into a jar. Let it cool, then store it in the refrigerator.

For the Margarita:

  1. In a cocktail shaker, combine fig syrup, orange juice, honey, tequila, and triple sec. Shake well until fully mixed.
  2. Fill two glasses with ice and pour the margarita mixture over the top.
  3. Top each glass with club soda and gently stir.
