Enjoy these crispy, fried chicken bites coated with sweet and tangy orange sauce made with our fresh Catania oranges!
For chicken coating and chicken:
• 3/4 cup (90 g) plain all-purpose flour
• 1 medium egg
• 90 mL cold water
• Pinch of salt and pepper
• 1 LB boneless, skinless chicken breasts
• 2 tbsp cornstarch (cornflour)
• 1/2 cup (120 mL) Olive oil for frying
For the orange sauce:
• 3/4 cup freshly squeezed Catania
oranges
• Zest of half an orange
• 3 tbsp honey
• 5 tbsp soy sauce
• 2 cloves garlic, minced
• 1/4 tsp ground ginger
• 2 tbsp white vinegar
• 1 tsp sesame oil
For garnish:
• Sesame seeds
• Slices of green onions
1. Start by making the batter for the chicken. In a large bowl, add the all purpose flour, egg, salt, pepper, and water and mix together using a whisk until smooth.
2. Cut your chicken into cubes and place them in a separate bowl. Put some cornstarch and toss together so the chicken is fully coated.
3. Add the chicken to the batter, and mix together so it is fully coated.
4. Add olive oil to a large frying pan over medium heat. Start cooking the chicken, turning occasionally until golden brown and cooked throughout.
5. Make the orange sauce. In a medium bowl, mix together the orange juice and zest, sugar, soy sauce, garlic, ground ginger, vinegar, and sesame oil.
6. Once all the chicken is cooked and placed in a bowl lined with kitchen paper, add orange sauce to the pan. Bring it to the boil and simmer for a few minutes until slightly thickened.
7. Add the chicken back to the pan and carefully toss together until chicken is coated in sauce.
8. Serve the chicken topped with sesame seeds and slices of green onions.
